Santa Emu - Gran Reserva Sauvignon Blanc. Served on arrival.
Santa Emu - Reserve Chardonnay. A cevice of monkfish flavored with juniper, grapefruit, gin & citrus, pickled cucumber, and warm soft herb soda bread.
Santa Emu - Reserve Carmenere. A roast saddle of rabbit with woodland mushrooms, leek and truffle stuffing, crisp pancetta, dauphinose potatoes, and port reduction.
Santa Emu - Gran Reserva Merlot. French cheese with sea salt and rosemary savory oatcakes.
Santa Emu - Late Harvest Tardio. Sweet and salted chocolate cremeux, briselete, and vanilla cream parfait.
